Ptarmigan Stew

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the ptarmigan pieces to the pot and cook until browned on all sides.
  4. Sprinkle the flour over the ptarmigan and vegetables, stirring well to coat.
  5. Pour in the chicken broth and stir in the tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 1 hour, covered.
  7. Add the sliced carrots and diced potatoes to the pot. Continue simmering for another 30 minutes, or until the vegetables are tender.
  8. Taste and adjust the seasoning if needed.
  9. Serve the ptarmigan stew hot, garnished with fresh herbs if desired.
