Ptarmigan Stew
A hearty and flavorful stew made with ptarmigan, vegetables, and aromatic herbs.
Ingredients - Serves 6
- Butter - 2 tablespoons
- Flour - 2 tablespoons
- Salt and pepper - To taste
- Bay leaves - 2
- Rosemary - 1 teaspoon
- Thyme - 1 teaspoon
- Tomato paste - 2 tablespoons
- Chicken broth - 6 cups
- Garlic - 4 cloves, minced
- Celery - 2 stalks, chopped
- Potatoes - 4 medium, diced
- Carrots - 2 medium, sliced
- Onion - 1 large, chopped
- Ptarmigan - 2 whole birds, cleaned and cut into pieces
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the ptarmigan pieces to the pot and cook until browned on all sides.
- Sprinkle the flour over the ptarmigan and vegetables, stirring well to coat.
- Pour in the chicken broth and stir in the tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1 hour, covered.
- Add the sliced carrots and diced potatoes to the pot. Continue simmering for another 30 minutes, or until the vegetables are tender.
- Taste and adjust the seasoning if needed.
- Serve the ptarmigan stew hot, garnished with fresh herbs if desired.
