Let's Get Started

  1. In a large bowl, combine the corn masa flour, water, and salt. Mix until a smooth dough forms.
  2. Divide the dough into 12 equal portions and shape each portion into a ball.
  3. Heat the cooking oil in a skillet over medium heat. Add the ground beef, onion, garlic, cumin, chili powder, salt, and pepper. Cook until the beef is browned and the onion is softened.
  4. Take one portion of the dough and flatten it into a circle. Place a spoonful of the beef mixture and a sprinkle of shredded cheese in the center of the dough circle.
  5. Fold the dough over the filling to form a half-moon shape. Press the edges together to seal.
  6. Repeat with the remaining dough and filling.
  7. Heat a large skillet or griddle over medium heat. Cook the prietas for about 5 minutes on each side, or until golden brown and cooked through.
  8. Serve the prietas with salsa, sour cream, and chopped cilantro.
