Prawn Stuffed Avocado
This delicious prawn stuffed avocado is a refreshing and healthy appetizer or light meal.
Ingredients - Serves 2
- Black pepper - To taste
- Salt - To taste
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Cherry tomatoes - 1/4 cup, halved
- Cucumber - 1/4 cup, diced
- Red onion - 1/4 cup, finely chopped
- Cooked prawns - 200g (7oz), peeled and deveined
- Avocado - 2 ripe avocados
Let's Get Started
- Cut the avocados in half lengthwise and remove the pits.
- Scoop out some of the flesh from each avocado half to create a hollow space for the prawn filling.
- In a bowl, combine the cooked prawns, red onion, cucumber, cherry tomatoes, cilantro, lime juice, salt, and black pepper. Mix well.
- Divide the prawn mixture evenly among the avocado halves, filling the hollow space.
- Serve immediately and enjoy!
