Potjiekos
Potjiekos is a traditional South African stew cooked in a three-legged pot over an open fire. It's a slow-cooked mix of meat and vegetables with a savory sauce.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaves - 2
- Red wine - 1 cup
- Beef stock - 1 liter
- Green beans - 200g, trimmed
- Potatoes - 4, quartered
- Carrots - 3, sliced
- Garlic - 3 cloves, minced
- Onions - 2, chopped
- Beef chuck - 1 kg, cubed
Let's Get Started
- Heat a little oil in the potjie pot and brown the beef cubes on all sides. Remove and set aside.
- In the same pot, add the onions and garlic and sauté until soft.
- Return the beef to the pot and add the carrots, potatoes, green beans, beef stock, red wine, bay leaves, salt, and pepper.
- Cover the pot and simmer over a low heat for about 4 hours, or until the meat is tender and the flavors are well combined.
- Serve the potjiekos hot, straight from the pot.
