  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside.
  2. In the same pot, brown the pork shoulder, beef stew meat, and chicken thighs on all sides. Remove the meats and set aside.
  3. Add the chopped onions, carrots, potatoes, cabbage, and minced garlic to the pot. Cook for 5 minutes, stirring occasionally.
  4. Return the meats to the pot and add the bay leaves, thyme, salt, and pepper. Pour in the chicken broth and white wine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2 hours, or until the meats are tender and the flavors have melded together.
  6. Remove the bay leaves before serving.
  7. Serve the Potee Champenoise hot, garnished with the crispy bacon.
