Potee Champenoise
Potee Champenoise is a traditional French dish made with a variety of meats, vegetables, and seasonings.
Ingredients - Serves 6
- White wine - 1 cup
- Chicken broth - 4 cups
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaves - 2
- Garlic - 4 cloves, minced
- Cabbage - 1 small head, chopped
- Potatoes - 4, peeled and cubed
- Carrots - 4, peeled and chopped
- Onions - 2 large, chopped
- Chicken thighs - 6, bone-in
- Beef stew meat - 1.5 lbs, cubed
- Pork shoulder - 1.5 lbs, cubed
- Smoked bacon - 8 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside.
- In the same pot, brown the pork shoulder, beef stew meat, and chicken thighs on all sides. Remove the meats and set aside.
- Add the chopped onions, carrots, potatoes, cabbage, and minced garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Return the meats to the pot and add the bay leaves, thyme, salt, and pepper. Pour in the chicken broth and white wine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2 hours, or until the meats are tender and the flavors have melded together.
- Remove the bay leaves before serving.
- Serve the Potee Champenoise hot, garnished with the crispy bacon.
