Potato Omelette

Ingredients - Serves 4

Let's Get Started

  1. Heat 2 tablespoons of the olive oil in a large non-stick frying pan over medium heat.
  2. Add the potatoes and onion to the pan and cook until the potatoes are tender, about 10 minutes. Remove from the pan and set aside.
  3. In a large bowl, beat the eggs and season with salt and pepper. Add the cooked potatoes and onion to the eggs and stir to combine.
  4. Heat the remaining 2 tablespoons of olive oil in the pan over medium heat. Add the egg mixture to the pan and cook until the bottom is set, about 5 minutes.
  5. Flip the omelette and cook until the other side is set, about 5 minutes more.
  6. Slide the omelette onto a plate and let it cool for a few minutes before serving.
