Potato Omelette
A delicious and hearty Spanish-style omelette filled with potatoes and onions.
Ingredients - Serves 4
- Salt and pepper - To taste
- Eggs - 6
- Onion - 1 large, thinly sliced
- Potatoes - 2 large, thinly sliced
- Olive oil - 4 tablespoons
Let's Get Started
- Heat 2 tablespoons of the olive oil in a large non-stick frying pan over medium heat.
- Add the potatoes and onion to the pan and cook until the potatoes are tender, about 10 minutes. Remove from the pan and set aside.
- In a large bowl, beat the eggs and season with salt and pepper. Add the cooked potatoes and onion to the eggs and stir to combine.
- Heat the remaining 2 tablespoons of olive oil in the pan over medium heat. Add the egg mixture to the pan and cook until the bottom is set, about 5 minutes.
- Flip the omelette and cook until the other side is set, about 5 minutes more.
- Slide the omelette onto a plate and let it cool for a few minutes before serving.
