Pork Tenderloin with Maple Dijon Sauce

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the pork and sear on all sides until browned.
  5. Transfer the skillet to the oven and roast for 20 minutes, or until the pork is cooked through.
  6. While the pork is roasting, make the sauce. In a small saucepan, combine the garlic, maple syrup, dijon mustard, and soy sauce. Bring to a simmer.
  7. In a small bowl, mix the cornstarch with the water to make a slurry. Stir into the sauce and cook until thickened.
  8. Remove the pork from the oven and let rest for a few minutes. Slice and serve with the maple dijon sauce.
