Pork Tenderloin Curry

Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Chicken broth - 1 cup
- Coconut milk - 1 can
- Curry powder - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Pork tenderloin - 1 pound, cut into 1-inch pieces
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the pork tenderloin pieces and cook until browned on all sides. Remove from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook until softened.
- Add the curry powder and cook for another minute, stirring constantly.
- Return the pork to the skillet and add the coconut milk, chicken broth, salt, and pepper. Bring to a simmer.
- Cover and cook for about 45 minutes, or until the pork is tender.
