Pork Tenderloin Curry

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the pork tenderloin pieces and cook until browned on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the onion and garlic and cook until softened.
  4. Add the curry powder and cook for another minute, stirring constantly.
  5. Return the pork to the skillet and add the coconut milk, chicken broth, salt, and pepper. Bring to a simmer.
  6. Cover and cook for about 45 minutes, or until the pork is tender.
  7. Serve the curry over rice and garnish with fresh cilantro.
