Pork Tacos
These flavorful pork tacos are made with tender slow-cooked pork and topped with fresh toppings.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Tortillas - 8
- Chicken broth - 1 cup
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork shoulder - 2 pounds
Let's Get Started
- Season the pork shoulder with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
- Add the onion, garlic, chili powder, and cumin to the pot. Cook until the onion is soft and the spices are fragrant.
- Add the chicken broth to the pot and bring to a simmer. Cover and cook on low for 4 hours, or until the pork is tender and can be easily shredded with a fork.
- Remove the pork from the pot and shred it with a fork.
- Heat the tortillas in a dry skillet over medium heat until warm.
- Top each tortilla with shredded pork, sliced avocado, chopped cilantro, and a squeeze of lime juice.
