Pork Loin Roast with Gravy

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Season the pork loin roast with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin roast and sear on all sides until browned.
  4. Remove the pork loin roast from the skillet and set aside.
  5. In the same skillet, add the onion and garlic and cook until softened.
  6. Add the chicken broth and white wine to the skillet and bring to a simmer.
  7. Return the pork loin roast to the skillet and transfer to the preheated oven. Roast for about 1 hour, or until the pork is cooked through.
  8. Remove the skillet from the oven and transfer the pork loin roast to a cutting board to rest.
  9. In the same skillet, whisk together the flour and butter over medium heat until a thick paste forms. Continue to cook, whisking constantly, until the gravy is thickened.
  10. Slice the pork loin roast and serve with the gravy.
