Pork Loin Roast with Gravy

Ingredients - Serves 6
- Butter - 2 tablespoons
- Flour - 2 tablespoons
- White wine - 1 cup
- Chicken broth - 2 cups
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork loin roast - 2 pounds
Let's Get Started
- Preheat the oven to 375°F.
- Season the pork loin roast with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin roast and sear on all sides until browned.
- Remove the pork loin roast from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook until softened.
- Add the chicken broth and white wine to the skillet and bring to a simmer.
- Return the pork loin roast to the skillet and transfer to the preheated oven. Roast for about 1 hour, or until the pork is cooked through.
- Remove the skillet from the oven and transfer the pork loin roast to a cutting board to rest.
- In the same skillet, whisk together the flour and butter over medium heat until a thick paste forms. Continue to cook, whisking constantly, until the gravy is thickened.
- Slice the pork loin roast and serve with the gravy.
