  1. Preheat your oven to 275°F (135°C).
  2. Season the pork belly with salt and pepper.
  3. Heat the olive oil in a large oven-safe pan over medium-high heat. Add the pork belly, skin-side down, and cook until the skin is golden and crispy.
  4. Remove the pork belly from the pan and set it aside. Add the onions to the pan and cook until they are soft and golden.
  5. Add the brown sugar and balsamic vinegar to the onions and stir until the sugar is dissolved.
  6. Return the pork belly to the pan, skin-side up, and nestle it into the onions.
  7. Cover the pan with foil and bake for 3 hours, or until the pork belly is tender.
  8. Let the pork belly rest for a few minutes before slicing. Serve with the caramelized onions.
