Pork and Pineapple Stir Fry
This delicious stir fry combines tender pork with sweet pineapple for a flavorful and satisfying meal.
Ingredients - Serves 4
- Cooked rice - 4 cups (for serving)
- Green onions - 2, sliced (for garnish)
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Pineapple chunks - 2 cups
- Pork tenderloin - 1 lb, thinly sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over high heat.
- Add pork slices and cook until browned and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
- In the same skillet, add onion, bell peppers, garlic, and ginger. Stir fry for 2-3 minutes, until vegetables are slightly softened.
- Add pineapple chunks and cook for an additional 2 minutes.
- Return the cooked pork to the skillet and pour the sauce mixture over the ingredients.
- Stir fry for another 2 minutes, until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste.
- Serve the stir fry over cooked rice and garnish with sliced green onions.
