Ingredients - Serves 4

Let's Get Started

  1. Clean the octopus and place it in a pot with water. Boil it for about 1 hour until it's tender.
  2. While the octopus is boiling, preheat the oven to 200°C (390°F).
  3. Wash the potatoes and place them in a baking tray. Drizzle with half of the olive oil and sprinkle with salt. Roast them in the oven for about 1 hour.
  4. Once the octopus is boiled, place it in a baking tray, drizzle with the remaining olive oil and sprinkle with salt. Roast it in the oven for about 20 minutes.
  5. In a small pan, heat some olive oil and sauté the minced garlic until golden.
  6. Serve the octopus and potatoes drizzled with the garlic olive oil and sprinkled with chopped parsley.
