Polvo À Lagareiro
Polvo à Lagareiro is a traditional Portuguese dish primarily made of octopus and potatoes. The octopus is boiled to tenderness and then roasted with potatoes, generously drizzled with olive oil.
Ingredients - Serves 4
- Parsley - A handful, chopped
- Salt - To taste
- Olive oil - 1 cup
- Garlic - 6 cloves, minced
- Potatoes - 1 kg, small
- Octopus - 1 whole, about 1.5 kg
Let's Get Started
- Clean the octopus and place it in a pot with water. Boil it for about 1 hour until it's tender.
- While the octopus is boiling, preheat the oven to 200°C (390°F).
- Wash the potatoes and place them in a baking tray. Drizzle with half of the olive oil and sprinkle with salt. Roast them in the oven for about 1 hour.
- Once the octopus is boiled, place it in a baking tray, drizzle with the remaining olive oil and sprinkle with salt. Roast it in the oven for about 20 minutes.
- In a small pan, heat some olive oil and sauté the minced garlic until golden.
- Serve the octopus and potatoes drizzled with the garlic olive oil and sprinkled with chopped parsley.
