Pollo Con Salsa de Mango
This is a delicious dish of chicken with a sweet and tangy mango sauce.
Ingredients - Serves 4
- Cilantro - 2 tablespoons, chopped
- Honey - 1 tablespoon
- Lime juice - 2 tablespoons
- Mango - 1, peeled and diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the diced mango, lime juice, and honey to the skillet. Cook until the mango is soft and the sauce has thickened, about 10 minutes.
- Return the chicken to the skillet and spoon the mango sauce over the top.
- Cook for an additional 2-3 minutes, until the chicken is heated through.
- Sprinkle with chopped cilantro before serving.
