Plantain and Bean Stew

- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Vegetable broth - 2 cups
- Tomatoes - 2, diced
- Bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Black beans - 2 cups, cooked
- Ripe plantains - 3, peeled and sliced
Let's Get Started
- Heat some oil in a large pot over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
