Pizzelle
Pizzelle are traditional Italian waffle cookies made from flour, eggs, sugar, butter or vegetable oil, and flavoring. This recipe uses anise extract for the flavoring, but feel free to substitute with vanilla or lemon extract if you prefer.
Ingredients - Serves 20
- Baking powder - 2 teaspoons
- All-purpose flour - 1 3/4 cups
- Anise extract - 1 teaspoon
- Butter - 1/2 cup, melted
- Sugar - 3/4 cup
- Eggs - 3
Let's Get Started
- In a large bowl, beat the eggs and sugar until thick.
- Stir in the melted butter and anise extract.
- In another bowl, combine the flour and baking powder, then gradually add to the egg mixture.
- Heat your pizzelle iron according to the manufacturer's instructions. Drop the batter by rounded spoonfuls onto the iron.
- Close the lid and cook for about 1 minute, or until golden brown.
- Carefully remove the pizzelle from the iron and cool on wire racks.
