Pistachio Crusted Salmon

Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Panko breadcrumbs - 1/2 cup
- Pistachios - 1 cup, shelled and chopped
- Honey - 1 tablespoon
- Dijon mustard - 2 tablespoons
- Salt and pepper - To taste
- Salmon fillets - 4 (6 ounce) fillets
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Season the salmon fillets with salt and pepper.
- In a small bowl, mix together the Dijon mustard and honey.
- In another bowl, mix together the chopped pistachios and Panko breadcrumbs.
- Brush the mustard-honey mixture over the top of each salmon fillet.
- Press the pistachio mixture onto the top of each salmon fillet, making sure to cover the mustard-honey mixture completely.
- Place the salmon fillets on the prepared baking sheet and drizzle with olive oil.
