Pinto Bean and Ground Turkey Tostadas

Ingredients - Serves 4
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/2 cup
- Avocado - 1, sliced
- Tomato - 1, diced
- Lettuce - 2 cups, shredded
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Tostada shells - 8
- Pinto beans - 1 can, drained and rinsed
- Ground turkey - 1 pound
Let's Get Started
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the cumin, chili powder, salt, and pepper.
- Add the pinto beans to the skillet and cook for an additional 5 minutes, stirring occasionally.
- Preheat the oven to 350°F.
- Place the tostada shells on a baking sheet and warm them in the oven for 5 minutes.

- Top with shredded lettuce, diced tomato, sliced avocado, sour cream, and chopped cilantro.
- Drizzle with lime juice and serve immediately.
