Pinto Bean and Ground Beef Tacos
These delicious tacos are filled with seasoned ground beef and creamy pinto beans.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Salsa - 1/2 cup
- Sour cream - 1/2 cup
- Shredded cheese - 1 cup
- Diced tomatoes - 1 cup
- Shredded lettuce - 1 cup
- Tortillas - 8 small flour tortillas
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, diced
- Taco seasoning - 1 packet
- Pinto beans - 1 can, drained and rinsed
- Ground beef - 1 pound
Let's Get Started
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the taco seasoning and pinto beans. Cook for an additional 5 minutes, until heated through.
- Warm the tortillas in a separate skillet or in the microwave.
- To assemble the tacos, spoon the beef and bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and chopped cilantro.
- Fold the tortillas in half and serve immediately.
