Pinto Bean and Cheese Stuffed Shells
These delicious stuffed shells are filled with a flavorful mixture of pinto beans, cheese, and spices.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Shredded mozzarella cheese - 1 cup
- Tomato sauce - 2 cups
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Green onions - 4, chopped
- Cream cheese - 4 ounces
- Cheddar cheese - 1 cup, shredded
- Pinto beans - 2 cups, cooked
- Jumbo pasta shells - 24 shells
Let's Get Started
- Cook the jumbo pasta shells according to package instructions. Drain and set aside.
- In a large bowl, combine the cooked pinto beans, cheddar cheese, cream cheese, green onions, garlic powder, cumin, salt, and black pepper. Mix well to combine.
- Preheat the oven to 375°F (190°C).
- Spread half of the tomato sauce on the bottom of a baking dish.
- Stuff each cooked pasta shell with the pinto bean and cheese mixture and place them in the baking dish.
- Pour the remaining tomato sauce over the stuffed shells.
- Sprinkle the shredded mozzarella cheese on top.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
