This creamy and refreshing pineapple panna cotta is a perfect dessert for any occasion.
Ingredients - Serves 6
- Mint leaves - For garnish
- Fresh pineapple slices - For garnish
- Vanilla extract - 1 teaspoon
- Sugar - 1/4 cup
- Heavy cream - 1 cup
- Cold water - 2 tablespoons
- Gelatin - 2 teaspoons
- Canned pineapple chunks - 1 cup
Let's Get Started
- Drain the canned pineapple chunks and reserve the juice.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.
- In a saucepan, heat the heavy cream, sugar, and reserved pineapple juice over medium heat until it starts to simmer.
- Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved.
- Add the canned pineapple chunks and vanilla extract to the saucepan and stir well.
- Pour the mixture into individual serving glasses or molds.
- Refrigerate for at least 4 hours, or until set.
- Before serving, garnish with fresh pineapple slices and mint leaves.
