Pineapple Mousse

Let's Get Started

  1. In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to soften.
  2. In a blender, puree the drained pineapple until smooth.
  3. In a saucepan, heat the pineapple puree and sugar over medium heat until the sugar is dissolved.
  4. Remove from heat and stir in the softened gelatin until completely dissolved.
  5. Let the mixture cool to room temperature.
  6. In a separate bowl, whip the whipping cream and vanilla extract until soft peaks form.
  7. Gently fold the whipped cream into the cooled pineapple mixture.
  8. Add lime juice and mix well.
  9. Pour the mousse into individual serving glasses or bowls.
  10. Refrigerate for at least 2 hours, or until set.
  11. Garnish with mint leaves before serving.
