Pineapple Mousse

Ingredients - Serves 6
- Mint leaves - For garnish
- Lime juice - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Whipping cream - 1 cup
- Sugar - 1/4 cup
- Water - 1/4 cup
- Gelatin - 1 tablespoon
- Canned pineapple - 1 can (20 oz), drained

- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to soften.
- In a blender, puree the drained pineapple until smooth.
