Pineapple Cake
A moist and flavorful cake made with crushed pineapple and topped with a sweet icing.
Ingredients - Serves 8
- Evaporated milk - 1/2 cup
- Powdered sugar - 2 cups
- Butter - 1/2 cup, melted
- Vanilla extract - 1 teaspoon
- Crushed pineapple - 1 can (20 ounces), undrained
- Eggs - 2
- Baking soda - 2 teaspoons
- Sugar - 2 cups
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease a 9x13 inch baking pan.
- In a large bowl, combine the flour, sugar, and baking soda.
- In another bowl, beat the eggs, pineapple, and vanilla. Add to the dry ingredients and mix well.
- Pour the batter into the prepared pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, make the icing by combining the melted butter, powdered sugar, and evaporated milk in a saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes, stirring constantly.
- Pour the icing over the warm cake. Let the cake cool completely before serving.
