Pineapple and Bell Pepper Stir Fry

  1. In a small bowl, whisk together soy sauce, sesame oil, ginger, cornstarch, water, salt, and pepper. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add the sliced onion and minced garlic, and stir fry for 2 minutes until fragrant.
  3. Add the sliced bell peppers to the skillet and stir fry for another 3-4 minutes until they start to soften.
  4. Add the cubed pineapple to the skillet and stir fry for an additional 2 minutes.
  5. Pour the sauce mixture over the stir fry and cook for 1-2 minutes until the sauce thickens and coats the ingredients.
  6. Remove from heat and serve the stir fry over cooked rice.
