Pineapple and Bell Pepper Stir Fry
This delicious stir fry combines the sweetness of pineapple with the crunch of bell peppers for a flavorful and colorful dish.
Ingredients - Serves 4
- Green onions - 2, sliced (for garnish)
- Cooked rice - 4 cups
- Salt and pepper - To taste
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Pineapple - 1 cup, cubed
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, ginger, cornstarch, water, salt, and pepper. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the sliced onion and minced garlic, and stir fry for 2 minutes until fragrant.
- Add the sliced bell peppers to the skillet and stir fry for another 3-4 minutes until they start to soften.
- Add the cubed pineapple to the skillet and stir fry for an additional 2 minutes.
