Ingredients - Serves 4
- Parsley - 2 tablespoons, chopped
- Capers - 2 tablespoons
- Lemon juice - 2 tablespoons
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Flour - 1/2 cup
- Salt and pepper - To taste
- Veal cutlets - 4, pounded thin

- Season the veal cutlets with salt and pepper, then dredge in flour.
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the veal cutlets and cook until golden brown, about 2-3 minutes per side. Remove from the skillet and set aside.
