Philly Chicken Sandwich

Let's Get Started

  1. Preheat the grill or a skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Drizzle olive oil over the chicken breasts and rub to coat.
  4. Grill the chicken breasts for 6-8 minutes per side, or until cooked through.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. In the meantime, heat 1 tablespoon of olive oil in a skillet over medium heat.
  7. Add the sliced peppers and onions to the skillet and sauté until they are soft and slightly caramelized, about 5-7 minutes.
  8. Slice the hoagie rolls in half lengthwise and spread mayonnaise and Dijon mustard on both sides.
  9. Place the sliced chicken on the bottom half of each roll.
  10. Top the chicken with the sautéed peppers and onions.
  11. Place 2 slices of provolone cheese on top of the peppers and onions.
  12. Close the sandwiches with the top halves of the rolls.
  13. If desired, you can wrap the sandwiches in foil and heat them in a preheated oven at 350°F for 5 minutes to melt the cheese.
  14. Serve the Philly chicken sandwiches warm and enjoy!
