  1. Preheat the oven to 275°F.
  2. Season the ribs with salt and pepper.
  3. Heat the olive oil in a large oven-safe pan over medium heat. Add the ribs and sear on all sides.
  4. In a bowl, combine the honey, mustard, vinegar, and garlic to make the glaze.
  5. Brush the glaze over the ribs.
  6. Cover the pan with foil and bake for 2.5 hours, or until the ribs are tender.
  7. Remove the foil and increase the oven temperature to 400°F. Bake for another 15 minutes, or until the glaze is caramelized.
  8. Let the ribs rest for a few minutes before serving.
