- Fresh thyme - 1 sprig
- Fresh rosemary - 1 sprig
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Petite filet mignon steaks - 2 (6 ounce)
Let's Get Started
- Preheat your oven to 400°F.
- Season the filet mignon steaks with salt and pepper on both sides.
- Heat the olive oil in a cast iron skillet over medium-high heat.
- Add the steaks to the skillet and sear on one side for 3 minutes.
- Flip the steaks and add the butter, garlic, rosemary, and thyme to the skillet.
- Baste the steaks with the butter mixture and sear for another 3 minutes.
- Transfer the skillet to the preheated oven and cook for 6-8 minutes, or until the steaks reach your desired level of doneness.
- Let the steaks rest for a few minutes before serving with the garlic herb butter from the skillet.
