Pesto Hashbrowns
These crispy hashbrowns are given a flavorful twist with the addition of homemade pesto. Perfect for a hearty breakfast or brunch.

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Pesto - 1/2 cup
- Potatoes - 4 large, peeled and grated

- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the potatoes and pesto. Season with salt and pepper.
- Heat the olive oil in a large non-stick skillet over medium heat.

- Cook for about 15 minutes, or until the bottom is golden and crispy.
- Flip the hashbrowns and cook for another 15 minutes, or until the other side is golden and crispy.
- Serve the pesto hashbrowns hot, with additional pesto on the side if desired.
