  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a large bowl, combine the potatoes and pesto. Season with salt and pepper.
  3. Heat the olive oil in a large non-stick skillet over medium heat.
  4. Add the potato mixture to the skillet and press it down with a spatula.
  5. Cook for about 15 minutes, or until the bottom is golden and crispy.
  6. Flip the hashbrowns and cook for another 15 minutes, or until the other side is golden and crispy.
  7. Serve the pesto hashbrowns hot, with additional pesto on the side if desired.
