Pesto Alla Genovese Con Trofie
A traditional Italian dish from Liguria, featuring homemade pesto sauce tossed with trofie pasta.
Ingredients - Serves 4
- Trofie pasta - 500 grams
- Salt - 1/2 teaspoon
- Extra virgin olive oil - 1/2 cup
- Parmesan cheese - 1/2 cup, grated
- Pine nuts - 1/3 cup
- Garlic - 2 cloves
- Basil leaves - 2 cups
Let's Get Started
- Combine the basil, garlic, pine nuts, Parmesan cheese, olive oil, and salt in a food processor or blender. Blend until smooth.
- Bring a large pot of salted water to a boil. Add the trofie pasta and cook until al dente, about 8-10 minutes.
- Drain the pasta, reserving some of the pasta water.
- Toss the pasta with the pesto, adding a little pasta water if needed to loosen the sauce.
- Serve immediately, garnished with extra Parmesan cheese if desired.
