Lentil Tacos with Avocado Cilantro Sauce
These vegan lentil tacos are topped with a creamy avocado cilantro sauce for a healthy and flavorful meal.
Ingredients - Serves 4
- Tortillas - 8, small
- Lime - 1, juiced
- Cilantro - 1/2 cup, chopped
- Avocado - 1, ripe
- Water - 2 cups
- Taco seasoning - 1 packet
- Lentils - 1 cup, dried
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the lentils and taco seasoning to the skillet and stir to combine. Add the water and bring to a simmer. Cover and cook until the lentils are tender, about 20 minutes.
- While the lentils are cooking, make the avocado cilantro sauce. In a blender or food processor, combine the avocado, cilantro, and lime juice. Blend until smooth.
- Warm the tortillas in a dry skillet over medium heat until they are soft and pliable.
- To assemble the tacos, spread a spoonful of the avocado cilantro sauce on each tortilla. Top with the lentil mixture and fold in half.
