Lentil Tacos with Avocado Cilantro Sauce

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the lentils and taco seasoning to the skillet and stir to combine. Add the water and bring to a simmer. Cover and cook until the lentils are tender, about 20 minutes.
  3. While the lentils are cooking, make the avocado cilantro sauce. In a blender or food processor, combine the avocado, cilantro, and lime juice. Blend until smooth.
  4. Warm the tortillas in a dry skillet over medium heat until they are soft and pliable.
  5. To assemble the tacos, spread a spoonful of the avocado cilantro sauce on each tortilla. Top with the lentil mixture and fold in half.
  6. Serve the tacos warm, with extra avocado cilantro sauce on the side.
