Pernil
Pernil is a traditional Puerto Rican dish made with slow-roasted marinated pork shoulder.
Ingredients - Serves 8
- Olive oil - 2 tablespoons
- Black pepper - 1 tablespoon
- Salt - 2 tablespoons
- Cumin - 1 tablespoon
- Oregano - 2 tablespoons
- Lime juice - 1/2 cup
- Orange juice - 1 cup
- Garlic - 10 cloves, minced
- Pork shoulder - 5 pounds
Let's Get Started
- In a bowl, combine the minced garlic, orange juice, lime juice, oregano, cumin, salt, black pepper, and olive oil to make the marinade.
- Place the pork shoulder in a large resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, or overnight for best results.
- Preheat the oven to 325°F (165°C).
- Remove the pork shoulder from the marinade and place it in a roasting pan. Discard the remaining marinade.
- Cover the roasting pan with aluminum foil and roast the pork shoulder for 4 hours, or until the meat is tender and easily pulls apart with a fork.
- Remove the foil and increase the oven temperature to 450°F (230°C). Roast the pork shoulder for an additional 30 minutes, or until the skin is crispy and golden brown.
- Remove the pernil from the oven and let it rest for 15 minutes before slicing.
- Serve the pernil with your favorite side dishes and enjoy!
