Pepper and Mushroom Stir Fry
This delicious stir fry is made with colorful bell peppers, mushrooms, and a flavorful sauce.
Ingredients - Serves 2
- Green onions - 2, sliced (for garnish)
- Salt and pepper - To taste
- Cooking oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 teaspoon
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Mushrooms - 8 ounces, sliced
- Bell peppers - 2, thinly sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger, and cook for 1 minute until fragrant.
- Add bell peppers and mushrooms to the skillet, and stir fry for 5-6 minutes until vegetables are tender-crisp.
- Pour the sauce mixture over the vegetables, and stir well to coat.
- Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Remove from heat and garnish with sliced green onions.
- Serve hot over steamed rice or noodles.
