Pejibaye Soup

Ingredients - Serves 4

Let's Get Started

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the pejibayes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a regular blender and puree it in batches.
  5. Stir in the heavy cream and season with salt and pepper. Cook for an additional 10 minutes, until the soup is heated through.
  6. Serve the soup hot, garnished with additional pejibaye slices if desired.
