Pejibaye Soup
A creamy, rich soup made from pejibaye, a fruit native to Costa Rica. It's a unique and delicious dish that's sure to impress.
Ingredients - Serves 4
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Pejibayes - 6, cooked and peeled
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the pejibayes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a regular blender and puree it in batches.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 10 minutes, until the soup is heated through.
- Serve the soup hot, garnished with additional pejibaye slices if desired.
