Pea and Tofu Stir Fry
This delicious stir fry combines fresh peas and tofu in a flavorful sauce.
Ingredients - Serves 2
- Green onions - 2, sliced, for garnish
- Cooked rice - 2 cups, for serving
- Salt and pepper - To taste
- Vegetable broth - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Peas - 1 cup, fresh or frozen
- Tofu - 1 block, cubed
Let's Get Started
- In a large skillet, heat the sesame oil over medium heat.
- Add the tofu cubes and cook until golden brown on all sides, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
- Add the peas and cook for 3-4 minutes, until they are tender.
- In a small bowl, whisk together the soy sauce, cornstarch, and vegetable broth.
- Pour the sauce into the skillet with the peas and cook for 1-2 minutes, until the sauce thickens.
- Add the cooked tofu back to the skillet and toss to coat it with the sauce.
- Season with salt and pepper to taste.
- Serve the pea and tofu stir fry over cooked rice.
- Garnish with sliced green onions.
