Pea and Tarragon Soup
This refreshing pea and tarragon soup is packed with flavor and perfect for a light lunch or dinner.
Ingredients - Serves 4
- Lemon zest - 1 teaspoon
- Greek yogurt - 1/2 cup
- Salt and pepper - To taste
- Fresh tarragon - 2 tablespoons, chopped
- Vegetable broth - 4 cups
- Frozen peas - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the frozen peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove the pot from the heat and let it cool slightly.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the chopped tarragon. Season with salt and pepper to taste.
- In a small bowl, mix together the Greek yogurt and lemon zest.
- Serve the soup hot, topped with a dollop of the lemon yogurt mixture.
