Pea and Tarragon Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the frozen peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Remove the pot from the heat and let it cool slightly.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the chopped tarragon. Season with salt and pepper to taste.
  7. In a small bowl, mix together the Greek yogurt and lemon zest.
  8. Serve the soup hot, topped with a dollop of the lemon yogurt mixture.
