Pea and Rice Pilaf
This flavorful pea and rice pilaf is a delicious and nutritious side dish.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Black pepper - To taste
- Salt - To taste
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Frozen peas - 1 cup
- Basmati rice - 1 cup
Let's Get Started
- Rinse the basmati rice under cold water until the water runs clear.
- In a large saucepan, heat some oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the rice to the saucepan and stir to coat it with the onion and garlic mixture.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the saucepan, and let the rice simmer for about 10 minutes.
- Add the frozen peas, turmeric, cumin, salt, and black pepper to the saucepan. Stir well.
- Cover the saucepan again and let the pilaf cook for another 5-7 minutes, or until the rice is tender and the peas are heated through.
- Remove from heat and let the pilaf sit, covered, for a few minutes.
- Fluff the rice with a fork and garnish with fresh chopped cilantro before serving.
