Pea and Potato Fritters
These crispy pea and potato fritters are packed with flavor and make a delicious appetizer or side dish.
Ingredients - Serves 4
- Vegetable oil - 1/4 cup, for frying
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Chickpea flour - 1/4 cup
- Fresh cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Frozen peas - 1 cup, thawed
- Potatoes - 2 medium, peeled and grated
Let's Get Started
- In a large bowl, combine the grated potatoes, thawed peas, chopped onion, minced garlic, chopped cilantro, chickpea flour, cumin, coriander, salt, and black pepper. Mix well.
- Heat vegetable oil in a frying pan over medium heat.
- Scoop about 1/4 cup of the potato mixture and flatten it into a patty. Repeat with the remaining mixture.
- Place the patties in the hot oil and cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and drain on a paper towel to remove excess oil.
- Serve the pea and potato fritters hot with your favorite dipping sauce or chutney.
