Pea and Chorizo Tacos

Ingredients - Serves 4

Let's Get Started

  1. Heat a large skillet over medium heat and add the diced chorizo. Cook until browned and crispy, about 5 minutes.
  2. Remove the chorizo from the skillet and set aside. Leave the rendered fat in the skillet.
  3. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  4. Add the frozen peas, cumin, chili powder, salt, and pepper to the skillet. Cook for another 5 minutes, or until the peas are heated through.
  5. Return the cooked chorizo to the skillet and stir to combine with the pea mixture. Cook for an additional 2-3 minutes.
  6. Warm the tortillas in a separate skillet or in the oven.
  7. To assemble the tacos, spoon the pea and chorizo mixture onto each tortilla. Top with sliced avocado and chopped cilantro.
  8. Serve the tacos with lime wedges for squeezing over the top.
