Pea and Chorizo Tacos
These delicious pea and chorizo tacos are packed with flavor and make a perfect weeknight dinner.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Tortillas - 8 small
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Frozen peas - 1 cup
- Chorizo - 8 ounces, diced
Let's Get Started
- Heat a large skillet over medium heat and add the diced chorizo. Cook until browned and crispy, about 5 minutes.
- Remove the chorizo from the skillet and set aside. Leave the rendered fat in the skillet.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the frozen peas, cumin, chili powder, salt, and pepper to the skillet. Cook for another 5 minutes, or until the peas are heated through.
- Return the cooked chorizo to the skillet and stir to combine with the pea mixture. Cook for an additional 2-3 minutes.
- Warm the tortillas in a separate skillet or in the oven.
- To assemble the tacos, spoon the pea and chorizo mixture onto each tortilla. Top with sliced avocado and chopped cilantro.
- Serve the tacos with lime wedges for squeezing over the top.
