Pea and Blue Cheese Soup

- Fresh mint leaves - For garnish
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Blue cheese - 1/2 cup, crumbled
- Vegetable broth - 4 cups
- Frozen peas - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Butter - 2 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the frozen peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
