Fresh Pea Soup with Mint

Ingredients - Serves 4
- Cream - 1/4 cup (optional)
- Salt and pepper - To taste
- Fresh mint leaves - 1/4 cup, chopped
- Chicken or vegetable broth - 4 cups
- Fresh peas - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the peas and broth and bring to a boil.
- Reduce the heat and simmer until the peas are tender, about 10 minutes.
