Beef Brasato with Pappardelle and Mint
This hearty Italian dish features tender beef brasato served over wide pappardelle pasta, garnished with fresh mint for a refreshing twist.
Ingredients - Serves 4
- Fresh mint leaves - 1/4 cup, chopped
- Pappardelle pasta - 1 pound
- Bay leaves - 2
- Tomato paste - 2 tablespoons
- Beef broth - 2 cups
- Red wine - 2 cups
- Garlic - 3 cloves, minced
- Carrots - 2, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef chuck roast - 2 pounds

- Season the beef with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onion, carrots, and garlic. Cook until the vegetables are softened.
- Add the wine, beef broth, tomato paste, and bay leaves to the pot. Bring to a simmer.
- Return the beef to the pot. Cover and simmer for 2-3 hours, until the beef is tender.
- Remove the beef from the pot and shred it with two forks.
- Cook the pappardelle according to the package instructions. Drain and set aside.
- Serve the shredded beef over the pappardelle. Garnish with the chopped mint.
