Beef Brasato with Pappardelle and Mint

  1. Season the beef with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, add the onion, carrots, and garlic. Cook until the vegetables are softened.
  5. Add the wine, beef broth, tomato paste, and bay leaves to the pot. Bring to a simmer.
  6. Return the beef to the pot. Cover and simmer for 2-3 hours, until the beef is tender.
  7. Remove the beef from the pot and shred it with two forks.
  8. Cook the pappardelle according to the package instructions. Drain and set aside.
  9. Serve the shredded beef over the pappardelle. Garnish with the chopped mint.
