Pan Seared Scallops with Sweet Pea Puree

- Lemon juice - 1 tablespoon
- Fresh mint leaves - 1/4 cup
- Chicken broth - 1/2 cup
- Frozen peas - 2 cups
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Scallops - 12 large
Let's Get Started
- Season the scallops with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Add the scallops and sear until golden brown on both sides, about 2 minutes per side. Remove from the skillet and set aside.
