  1. Preheat the oven to 425°F.
  2. Place the potatoes in a large pot of salted boiling water and cook until tender, about 10 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. In a large bowl, combine the olive oil, salt, paprika, and garlic powder.
  5. Add the potatoes to the bowl and toss until they are evenly coated with the oil and spices.
  6. Spread the potatoes out on a baking sheet in a single layer.
  7. Bake for 20-25 minutes, or until the potatoes are crispy and golden brown.

  9. In another small bowl, mix together the mayonnaise and minced garlic to make the aioli.
  10. Once the potatoes are done, transfer them to a serving dish and drizzle with the spicy tomato sauce.
  11. Garnish with the chopped parsley and serve with the garlic aioli on the side.
