Pastrami Stuffed Baked Potatoes

  1. Preheat the oven to 400°F.
  2. Prick the potatoes with a fork and bake for 1 hour, or until tender.
  3. While the potatoes are baking, heat the olive oil in a skillet over medium heat.
  4. Add the onions and cook until soft and golden, about 10 minutes.
  5. Add the pastrami and cook until heated through, about 5 minutes. Season with salt and pepper.
  6. Cut a slit in the top of each baked potato and fluff the inside with a fork.
  7. Stuff the potatoes with the pastrami mixture and top with the shredded cheese.

  9. Serve the potatoes with a dollop of sour cream and a sprinkle of chives.
