Pastrami Stuffed Baked Potatoes
These hearty baked potatoes are stuffed with savory pastrami, sautéed onions, and melted cheese for a satisfying main course.

- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Pastrami - 1 pound, thinly sliced
- Onions - 2, thinly sliced
- Olive oil - 2 tablespoons
- Large russet potatoes - 4
Let's Get Started
- Preheat the oven to 400°F.
- Prick the potatoes with a fork and bake for 1 hour, or until tender.
- While the potatoes are baking, heat the olive oil in a skillet over medium heat.
- Add the onions and cook until soft and golden, about 10 minutes.
