Let's Get Started

  1. Spread a thin layer of Dijon mustard on one side of each tortilla.
  2. Layer the pastrami, Swiss cheese, and pickles on half of each tortilla, then fold the tortilla in half to cover the fillings.
  3. Heat the butter in a large skillet over medium heat.
  4. Place the quesadillas in the skillet and cook for 2-3 minutes on each side, until the tortillas are golden and the cheese is melted.
  5. Remove the quesadillas from the skillet and let them cool for a few minutes before cutting into wedges.
  6. Serve warm with extra pickles and mustard on the side.
