Pasticada
Pasticada is a traditional Croatian dish made with beef, red wine, and aromatic spices.
Ingredients - Serves 6
- Pasta (such as gnocchi or fettuccine) - 1 pound
- Water - 2 cups
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaves - 2
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Tomato paste - 2 tablespoons
- Garlic - 4 cloves, minced
- Celery stalks - 2, chopped
- Carrots - 2 medium, chopped
- Onions - 2 large, chopped
- Red wine - 2 cups
- Beef chuck roast - 2 pounds
Let's Get Started
- In a large bowl, marinate the beef chuck roast in red wine for at least 4 hours or overnight.
- Remove the beef from the marinade and pat dry with paper towels. Reserve the marinade.
- In a large pot, heat olive oil over medium-high heat. Add the beef and brown on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
- Add the tomato paste, dried rosemary, dried thyme, bay leaves, salt, and pepper. Stir to combine.
- Return the beef to the pot and pour in the reserved marinade and water.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender.
- While the beef is cooking, prepare the pasta according to package instructions.
- Once the beef is tender, remove it from the pot and let it rest for a few minutes.
- Slice the beef and serve it with the cooked pasta and the sauce from the pot.
