Ingredients - Serves 6

Let's Get Started

  1. In a large bowl, marinate the beef chuck roast in red wine for at least 4 hours or overnight.
  2. Remove the beef from the marinade and pat dry with paper towels. Reserve the marinade.
  3. In a large pot, heat olive oil over medium-high heat. Add the beef and brown on all sides.
  4. Remove the beef from the pot and set aside.
  5. In the same pot, add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
  6. Add the tomato paste, dried rosemary, dried thyme, bay leaves, salt, and pepper. Stir to combine.
  7. Return the beef to the pot and pour in the reserved marinade and water.
  8. Bring to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender.
  9. While the beef is cooking, prepare the pasta according to package instructions.
  10. Once the beef is tender, remove it from the pot and let it rest for a few minutes.
  11. Slice the beef and serve it with the cooked pasta and the sauce from the pot.
