Pastel de Yuca
Pastel de Yuca is a delicious and traditional Colombian dish. It's a casserole made with a flavorful meat filling and a creamy cassava crust.
Ingredients - Serves 6
- Mozzarella cheese - 1 cup, shredded
- Butter - 4 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Tomato - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Ground beef - 1 pound
- Yuca - 2 pounds, peeled and cut into chunks
Let's Get Started
- Preheat the oven to 350°F.
- Boil the yuca in a large pot of salted water until tender. Drain and mash until smooth.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is soft.
- Add the tomato, cumin, salt, and pepper to the skillet and cook for another 5 minutes.
- Grease a baking dish with 2 tablespoons of the butter. Spread half of the mashed yuca in the bottom of the dish.
- Spread the beef mixture over the yuca, then top with the remaining yuca.
- Dot the top of the casserole with the remaining butter and sprinkle with the shredded cheese.
- Bake for 30 minutes, or until the cheese is melted and bubbly.
