Pastel de Angu

Ingredients - Serves 6
- Parmesan cheese - 1/2 cup, grated
- Mozzarella cheese - 1 cup, shredded
- Butter - 2 tablespoons
- Salt - 1 teaspoon
- Water - 4 cups
- Cornmeal - 2 cups

- In a large pot, bring the water to a boil.
- Slowly whisk in the cornmeal and salt, reducing the heat to low.
- Continue to stir the mixture for about 15 minutes, until it thickens.
- Remove the pot from the heat and stir in the butter until it's fully incorporated.
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Spread half of the cornmeal mixture into the bottom of the dish.
- Sprinkle the mozzarella and parmesan cheese evenly over the cornmeal.
- Spread the remaining cornmeal mixture over the cheese, smoothing the top with a spatula.
- Bake for 20-25 minutes, or until the top is golden and the cheese is bubbly.
- Allow the dish to cool for a few minutes before serving.
