Paste Di Meliga
Paste di Meliga are traditional Italian shortbread cookies from Piedmont, made with cornmeal and lemon zest. They are perfect for a sweet breakfast or a tasty snack.
Ingredients - Serves 30
- Baking powder - 1 teaspoon
- Cornmeal - 100 grams
- All-purpose flour - 200 grams
- Lemon zest - 1 lemon
- Eggs - 2
- Sugar - 150 grams
- Butter - 200 grams
Let's Get Started
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the lemon zest.
- In a separate bowl, combine the flour, cornmeal, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Transfer the dough to a piping bag fitted with a star nozzle.
- Pipe the cookies onto the prepared baking sheet, leaving a little space between each one.
- Bake for 15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
